This is what happens when you have a highly overcarbonated beer. It was a saison, RIP.

Yeah, I kinda assumed this batch was going to burst. I did a second yeast injection as I thought the first wasn't doing so well and even after sitting inthe secondary for 3 weeks, the yeast cake still had a nice white layer on the top and the SG hadn't fallen nearly as much as it should have. Live and learn. The fun part, was that only one bottle burst. But, fearing for my safety, I decided to pop the rest of the case. So I move the cast to the bathtub and proceeded to put on a show that would rival any of the diet Coke and Mentos videos on Youtube. Good times...

So did you get to try any of it? If only one burst, you could totally have drank some of the beer that didn't foam over from the others!

What yeast did you use? For future reference, most of the saison yeasts you can buy are notorious for being slow. Give them AT LEAST 6 weeks in secondary. I've heard several months before to finish fermenting even.

I initially used a Saison Propagator, but when I got it in the mail the pouch was already a bit puffed out so the yeast had already started on the nutrient inside. Fearing this may have impeded its effectiveness, I picked up an Abbey Ale pitchable tube for backup. I made the mistake in pitching the latter into into the secondary when I racked it. A week in the primary, 3 in the secondary. Definately should have left int he secondary another month or so. I did try some, it had a bit of an off sourness, much more than expected.

well part of brewing is def learning from mistakes. sadly this one was some lost beer, but hopefully the next saison you brew will work out
