Hey guys,
Now that some construction is done around the house I can get back to some homebrewing!
I bought the ingredients to make a "Magic Hat #9 Wannabee"

6.00 lb Extra Light Dry Extract (3.0 SRM) Dry Extract
0.50 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain
2.00 oz Amarillo [7.10%] (45 min) Hops 38.7 IBU
1.00 tsp Irish Moss (Boil 15.0 min)
4.00 oz Apricot Extract (Bottling 0.0 min)
1 Pkgs Dry Ale, #04 (Safale) Yeast-Ale


My questions is with the Apricot Extract. I've never used any of these flavoring extracts, let alone knew that they came in a liquid bottle form. But when do I add it? During the boil, after the rapid cool, in the fermenter, or into the keg? Any insight would be outstanding!

Also, the irish moss...what exactly IS that doing. Doesnt seem to be like a flavoring ingredient . I thought I read it somewhere that it is more of a clarifying than anything.

I've never used extract so I'm not sure actually. Hopefully Jeff knows the answer here.

I typed a long answer, but my computer freaked and I lost it. So, here's the short and quick one:

Irish Moss is for clarifying. I don't use it. Only bother if you're entering into a competition or care about clear beer. No flavor effects.

Add the flavoring in the fermenter after primary fermentation is complete, or so says my friend who just made a similar blackberry beer. I haven't tried it yet, so can't confirm or deny. He also says to add 1/2 what the recipe calls for.

You mentioned to add it to the fermenter after primary is complete...so do you mean the secondary? I normally dont do that - i usally just go from the 7 or so days of fermentation right to the keg - would I just put it right in the keg?

Didn't necessarily mean in the secondary, just after primary fermentation has completed (at least the most active part, so after high krausen). If you go from fermenter to keg, I'd say add after high krausen then move to keg as normal. This circulate the flavoring to ensure equal distribution.

Let us know how it turns out.

That said, are there any directions that came with the kit for when to add flavoring?

awesome, thanks for info.
I looked up a recipe online so it wasnt a kit, and the reciped didnt have any directions as far as the flavoring goes.

Well I brewed this beer last night and I must say im getting better and better at this everytime! Im like streamlining the process more and more evertime, and im not stressing myself out as much either! I checked it this morning and it started fermenting - then i checked it tonight when i got home and it was going crazy. I havent seen one this active before. It was like a circus in there! there was so much stuff floating around goin up and down...it was quite intense!
So what makes the intesity of the fermentation higher and lower? some pretty calm some pretty wild. - I wasnt really expecting this one to be very wild since some of the my other recipies/kits had me brewing with more ingrediants as this one seemed quite simple in comparison.

Honestly there are a lot of factors that go into how active your fermentation is:

- temperature
- viability of the yeast
- composition of the wort
- oxygen in the wort
- pH
- etc...

Some of those are beyond most homebrewers level of sophistication. Viability of the yeast is usually a crap shot if you're not culturing your own and don't make a starter.

Glad to hear it's going well, though! Congrats on getting more comfortable with the brew process!
