I would check out probrewer.com or other restaurant/bar industry forums. This is mostly a consumer facing site.
That said, some useful information might be:
- Where are you looking to do this?
- What is your experience? (there is licensing to think about, waster water needs, building permits, zoning, etc...)
- How do you have the money to do this (it's an expensive endeavor and a bar owner is not going to want to give up 1000 sqft without assurance that you're not going to run out of funding 1/2 way through).
- Do you have to worry about permitting, or is that the bar owner's job? In the end, the bar owner will be held responsible if you don't get the proper permitting, but it's A LOT of work to get a place cleared for having a brewpub in it. Much harder than getting clearance for a bar.
No offense, but if you're looking to start a serious business partnership that is going to involve a lot of money, which you are looking to do, you're going to need more detail.
