Cambridge Brewing Update!

Well, it's been awhile, so I think it's time to pimp out a bit and share some CBC news.
Hot on the heels of our Silver Medal win for our flagship beer, Cambridge Amber (in the Cellar/Unfiltered Ale or Lager Category), we're happy to report that since the addition of our new 8.5ton chiller over the summer, we are using our filter for our Kolsch (Regatta Golden) only. Finally, after 18 years, we're able to get our beer to freezing temps and it. just. drops. bright. No finings, no nothin'. Nothin' but cold. Granted, we had only been using it for our Golden, Amber, Pale, and the occasional seasonal brew, but it's nice to just leave the thing in the corner.

Lots of fun stuff happening in the CBC Barrel Cellar of Doom, including new batches of Blunderbuss Barleywine in Buffalo Trace barrels, the next batch of our "double-lambic" Kriek du Cambridge in French oak (see On Tap below), and a strong Belgian-style Golden Ale also in French oak, which will be released at the next Extreme Beer Fest as OM. As some may recall from last year's panel at the EBF, we're pursuing Vibrational Therapy based on the work of Kepler and Cousto by vibrating these barrels regularly at 136Hz, which is the frequency of OM. While we're not guaranteeing inner peace and harmony amongst men, it's worth a shot. At worst, this 9.3% beer will be smooooth. Oh, plus YouEnjoyMyStout, Cerise Cassee, and next years' Arquebus, natch.

Finally, we received zoning approval (YES!) for our little 100sq.ft. buildout, and construction will begin December 1. Our five new 15bbl. tanks (3x fermenters, 2x servers) SHOULD arrive before Thanksgiving, after a greater than six month delay. Whew! That means, you guessed it, more crazy and wonderous things from the demented gang at CBC including full-time rotating IPAs, Belgian-style ales, and beer-from-the-wood, plus year-round barleywines (Blunderbuss and Arquebus). Get ready.

Kriek du Cambridge (very sour "double lambic" or American Sour Ale based on our Biere de Miel, aged in 2 French oak bbls. w/30gallons of whole sour cherries, 9%)
Next Friday:
Blackout Stout (our Irish dry stout, nitrogenated, smooth, and yummy)
After that? Stay Tuned...

Haha, literally JUST getting ready to post this up. Sounds great to me! I'm heading down as soon as I can!

I had the Kriek du Cambridge at Night of the Funk and it certainly was sour. The look on my girlfriend's face when she first sipped it was priceless. I enjoyed the other beer they had on tap at the event... not the "Pissah" one, but the other one... drawing a complete blank on the name.

nope, it was the cerisee cassee, which is an awesome beer.

If you can, get down to CBC to get a full pour of the double kriek....in a word...amazing...i think it stands up with the best belgian sours IMO.

the stuff left over from the BBF is gone, but obviously the kriek is still there and the GPA...we're spoiled to be near such an awesome place....if they had ANY kind of distro, they'd get love all over the USA. Ala a place like RR.

Yea, I just went there, Will's beers are that good.

I was at CBC this past Monday and they had a ton of beers left over from the Brewer's Dinner from the weekend. The only one they did not have at the time was the Hefe. Now I don't know what a week has done to that list, but wanted to let people know.
